It may have come naturally to you, but it certainly hasn't to me. And between my last two bikes I'm just now past 3000 miles.
Of course, it could be the case that both Yahuda and I are outliers.

In most of Yahuda's commutes he seems to be riding on unmade roads or cross-country which might explain the need to keep hold of the bars. Also the overloaded front bag might be the cause of the problem.

Seems odd that a daily rider like Yehuda cannot ride no-handed. After a couple of thousand kilometers it comes naturally, even if you didn't "exercise" for that. Just try and it works for kilometers... of course, only if the headset works smoothly.

In Florida, it is illegal to ride your bicycle with no hands on the handlebars. Not to mention foolish and dangerous on the streets near my house (which resemble artillery impact areas in places, with all the overlapping ruts and craters).

Look ma, no hands...

But on a road bike, a lot of stress is relieved from my shoulders and back when I sit upright and ride with no hands....

It's odd that people on bikes love to brag about riding no hands, while unicyclists are now starting to use handlebars... Bottom line is that handlebars are great to distribute your weight across more contact points. Try riding a unicycle for over an hour straight and you will not be so excited about riding no handed.
